Making of Besan Laddoo...
... Yeah the First day of Diwali.. The 1st November was nearing so fast plus work and daily routine as usual busy.. But Somehow we managed to prepare the Dishes usually made in Diwali... the laddoos, the shankarpalis, the Karanjis.... Yet Sev, chakalis and chivda were remaining .. With the era of smartphone I couldnt stop myself from clicking the pics of Besan ke Laddoo preparation... and so I went on and on click. click. click for each and every step.. Just want to pen down the entire 4/5 hours efforts spent(continuously sitting in one place) only to reach at the last stage of beautiful round sweet.
So let me start in a very homely style and unprofessional way.
You will require one glass for measurement of all the items mentioned below:
- Besan ka atta --> chana dal ka atta --> Split Bengal Gram Flour -- 4 glasses full
- Sugar Powder -- 4 glasses full
- Pure Ghee -- Approx 3/4 glasses as per measure of atta (I took as seen in below pic)
This sweet is prepared by combination of above three items in equal measures.
For further elevating the taste of laddoo,
we will need
- Cardamom powder (elaichi/ veldode/ ilaichi) --> 5/6 spoons
- Kismish -- Raisins -- 8/9 grams
- Quince seeds - Bedana - few
Some put Cashewnuts and Almonds as well but I don't prefer so excluded.
Lets start with the preparation...
Start heating a pan / Kadai on low flame of Gas.
Once the pan / Kadai is warm enough put 1/2 to 3/4th glass of Pure Ghee. Let it warm up.
After warming add one Glass Besan ka Atta. Note: Ghee and Atta should be in equal measure. Ghee melts after warming hence we take the quantity less to a glass.
Keep stirring continuously until the atta turns golden brown or as seen in the picture below.
One should be very careful as the atta should not over burn or turn dark brown and taste bitter.
Once the atta is brown which means its ready it can be removed in some utensil.
The Texture should turn up as below:
Then Add 4 Glasses (equal measure) of Sugar Powder to the Atta and mix them well.
There should not be any lumps of sugar or Atta, as good as powder.
Add Cardamom 5/6 spoons to the mixture.
Add Raisins about 8 grams.
Add few Quince seeds as well (bedana).

It is observed that when the mixture is warm, you start making the laddoos however one can also prepare after the mixture is cold.
We prepared when the mixture was warm.
Take handful of mixture in your palm and start rolling in your fist round and round. Once the round starts forming give proper shape with both the palms of your hands.
To one's delight, most awaited, mouth watering laddoos....
Preparation time: Around 5 hours.
We prepared many more dishes however due to time constraints couldn't click the pics.
